I'm sure I'm forgetting something..

Thirty things I vow to do this summer:

1. Laugh more.
2. Yell less.
3. Wear a bikini.
4. Stop obsessing over cellulite.
5. Get serious about running.
6. Daydream.
7. Wean X.
8. Step away from the computer. For hours.
9. Let the kids have ice cream from the truck, even right before dinner.
10. Have ice cream for dinner.
11. Let go.
12. Jump in the pool.
13. Jump in the ocean.
14. Jump in.
15. Dance in my bare feet.
16. Dance with my husband.
17. Say Yes.
18. Find my Red Dress
19. Slow down.
20. Take adventures.
21. Take time for myself.
22. Wear sunscreen.
23. Be open.
24. Romp like a child - with my children.
25. Clean out the garage (I know, but seriously? Disaster!).
26. Ride my bike.
27. Watch the kids play in the street until dark. Until after dark.
28. Cook.
29. Imagine.
30. Write.

Fire 'n Ice Pickles
From the Kitchen of Deep South Dish

1 large (46 ounce) jar whole sour dill pickles,
about 6 cups sliced (not kosher dill)*
2-1/2 cups of sugar, divided
4 cloves of garlic, minced or thinly sliced and divided
2 whole jalapenos, chopped and divided
2 teaspoons of red pepper flakes
2 teaspoons of pickling spice, divided,
optional (recipe below)

Drain the pickles and discard juice but reserve the jar. Slice the pickles into 1/4 to 1/2 inch slices and divide into four equal parts.

Begin layering into a larger jar, bowl or container, starting with one-fourth of the pickles - in my case it was roughly a 1-1/2 cup measure of pickles per layer. Top the pickles with 1/2 cup sugar, 1 clove of garlic sliced or chopped, 1/2 teaspoon of red pepper flakes, 1/2 teaspoon of chopped jalapeno, and 1/2 teaspoon of the pickling spice, if using, dropping a clove and piece of the cinnamon stick (from the pickling spice mixture below) in between the layers. Continue repeating the layers.

Cover jar and store on the counter for about an hour, or until the sugar begins to liquify. Stir or simply shake to mix the pickles well, and pull any undissolved sugar up from the bottom. Cover and leave on the counter for several more hours, or overnight. Stir and refrigerate 1 to 2 additional days. If desired, transfer the pickles with their juices back into the original or other smaller jars and store in the refrigerator.

Use for snacking, in sandwiches and burgers, in potato and pasta salads, or wherever you would usually eat pickles!

Homemade Pickling Spice
From the Kitchen of Deep South Dish

1 tablespoon of whole mustard seed
1/2 tablespoon whole allspice
1 teaspoon whole coriander seeds
1/4 teaspoon whole cloves, optional
1 small bay leaf, crushed

Combine ingredients. Use 1/4 to 1/2 teaspoon of mixture per layer.

I may have to steal this list!!! Except for the bikini part--YIKES. I wish they still made those old-timey swimsuits with bloomers--that's a suit I can get behind! :) (And that hides my behind!)

I ditto just about everything, except: we live in NYC, no garage (OK, I guess you could clean out our storage cubicle in the building's basement) and you will NEVER see me in a bikini, not after what carrying full term twins did to my body (14 lbs of babies + 2 placentas, etc. - you get the picture) Love to you!

Wonderful list! I might just print it and stick it on my fridge as a reminder. We get so busy we forget to get out there and have fun. Whatever happened to fun? I'm with you, time to start having fun (but nay to the garage...waaaay too much work).

i want to slow down more too. and read more and write more. i've given up on getting in a bikini again though :) i just don't have it in me . I wish i could get my husband to dance with me. I might have to work on that one happening.
